Red velvet cheesecake for a 17-year old niece

It isn't everyday that your niece has a birthday. Just one day out of 364 other days. So it's important to celebrate. Celebrations are special and so are birthdays. Wanting to mark this one with a memorable cake I baked a few red velvet's before I settled on this one. It was by far the best. It's got superb flavour, a great crumb and texture, and a yummy smooth cheesecake centre all wrapped up in a beautiful presentation. The modest layer of creamy smooth cheesecake in the middle is a welcome burst of flavour and the whole thing is wrapped in a not-too-sweet cream cheese icing that got great reviews from a family that doesn't like overly sweet icing. Considering Easter was just around the corner this year, I couldn't resist the pretty pink chocolate eggs to give it a simple, yet beautiful finish, along with a few dragees. This cake was all about celebrating.
