Cake decorating heats up!

This cake was quite a feat – wouldn’t you know it, but I had to make it on the hottest day of the year!!!  Quite honestly, I didn’t think either one of us were going to make it. Designed for a pre-wedding luncheon for 12 women, this cake has 3 tiers stacked one on top of the other, each layer decorated in a different colour.  The centre tier is finished off with sugar crystals to make it sparkly and the beads you see hanging from the top tier have little silver cake charms attached to them.  Before the cake is cut, each guest (in this case, each bridesmaid) will choose a charm and pull it out of the layers.  These cake charms are the very first ones I’ve seen but they seem to be coming back into popularity. The initials on the top of the cake are the bride and grooms personal logo and the calla lilies were also being used in the wedding the following day.  At the end of the day the cake turned out not too badly, the client was happy and I learned a very important lesson – don't leave your cake decorating to the hottest day of the year!
